The most important part that you need to know is the town in the Canary Islands, at least the island. Without this information it is quite difficult to search. The downside to researching in the Canary Islands is that currently there is no online access to any of the records from the Canaries. You have to go onsite to research. The benefit to researching onsite is that they have centralized many of the parish records in the Diocesan Archives. You could always try reaching out to the archive to see if they know of a researcher that you could hire.

As Brandon mentioned, there's no online access to records from the Canary Islands (I got stuck with a Canary ancestor in the 1500s). Since you don't speak Spanish I would say that the only option you have is contacting a genealogist over there.
