The date is 10 December-think Roman numerals:
7ber is September
8ber is October
9ber is November
10ber is December
The bride's first name looks like it could be "Daath" but there is no name like that in Scandinavia. It could be "Doth" or "Dott" but I can't really be sure.

But why would the betrothal be in May and the married in December?

Norm is correct. Svend Hansen and Daarthe Olsdatter were engaged 28 May, and married 10 December 1716.
