I am not an expert on this but I know that as a group administrator you can create subgroups in the group that you are an admin for. If you create two subgroups in your ward group, one for the Young Men, the other for the Young women, you should be able to either assign people to the appropriate subgroup or have them join the appropriate subgroup.
Creating a sub-group is not difficult. In your Ward Group click the Options button and select Create Subgroup. You will be asked for a group name, a display name and several other pieces of information about the group, most of which is required to create the subgroup. The group name cannot be changed once the subgroup is created, but the display name and all of the other information can be changed later. You will automatically become a member of the subgroup. Once you have other members I expect that you can assign one of the youth to be an admin for the subgroup and you can leave the subgroup so that your activity will not be included in the subgroup activity. The people in the All Temple & Family History Consultants group of this community can answer questions about administration of subgroups, but this should at least give you some idea of what to ask them about.
