This article in the Family Search Wiki on Danish personal names may, or may not, answer your question: https://www.familysearch.org/en/wiki/Denmark_Personal_Names.
Graah may be a variation of Graa (Grå) which means "gray" in Danish (the letter "å" can also be written "aa"). People often took a place name as a surname in Denmark, but I have not been able to locate any places in Denmark with the name of Graah, Graa, Gråh or Grå. It is not a really common name, but if you search with Graah in the "last name" field on this page: https://www.danishfamilysearch.com/search/ you will get close to 250 examples of the name in Danish records.
