Which date controls?
I have had the experience that sometimes the dates of birth of my ancestors do not match in the other documents (marriage certificates, death certificates, etc.). In such cases, what date should I enter in FamilySearch?

My suggestion is whichever one you think is most likely to be accurate. Factors affecting accuracy include the age of the person when giving the date, their literacy level and who is giving the date. You can always add the other dates either as alternative facts or in the reasons box under birth date stating the source of each.

Thank you for question, have you tried the Statutory Birth Registers for the area in which your ancestor was known to have been born or if before the date of Government Registration the Old parish records.
Another way of determining an ancestors age (Marriage and Death certificates usually don't give date of birth only the age of person at time of Marriage or Death), is to look at the census records for the area your ancestors was known to have lived.
