@DianeCole1 - To start with I would like to commend you on doing some good genealogical detective work. I really was impressed with the document in Jesse Henry's memories. That gave me some good ideas of how I can do likewise for some of my ancestors.
In your post - unfortunately this forum cut off the end of your initial question but I assume it is are John and Eunice the parents of your Jesse. Since you appear to not be a beginner I am sure we both agree that the jump from a document for a baptism of a Jesse Henry, son of John and Eunice to Jesse Henry married to a Mary on the 1861 census is a big jump and would benefit greatly from a marriage license for this couple naming their parents. But as so often is the case, the document just isn't there.
Scans the marriage license, some alternative documentation would be helpful. Has a search been made for a will or probate of John that name son Jesse, land titles that can be traced from John to Jesse, etc.??
Since this is a genetic genealogy group I could recommend a genealogical solution to your dilemma that I have used successfully. If you have done your DNA at Ancestry you will have some great tools that can help you. (If not I would recommend that you test there.) Post your tree at ancestry back to at least the father of Jesse - John Henry with all his wives and children. Link your tree to your DNA and give the system a few days to develop some Thrulines for your DNA and tree. John Henry should be close enough to you that if he is your ancestor, Thrulines will show you links to him through your John and through at least some of the other children of John with his first wife - Nancy Bigger. If the only Thruline that traces back to John Henry is through your Jesse then I would suggest that he probably isn't the John who is your Jesse Henry's father because you should also have connections to at least some of the other children of John if he is in fact your ancestor. I love Thrulines because it shows you not just who is related to you but also exactly how they connect with you - in this case which child of your ancestor that they go through.
