Is there a reason why we are not allowed to a person's gender if it's wrong?

You can, but you would have to detach all the relationships that are already in existence that indicate what gender the person is. For example, wife, mother, etc. once all those relationships are detached, you can change the gender and then reattach all the family members. I don't know if the system has changed but when I did this over a year ago, following the guidelines, it made the person ineligible for temple ordinances. I have created a case for each of these individuals and submitted them to FamilySearch to be able to perform ordinances. Still waiting for a reply.

Frustrating. You might touch back on one of those cases and see where they are at. It is possible that they have dropped through the cracks.
