It looks like Ancestry probably has a record count threshold to qualify a country to be listed in the "All Collections" search. I would just put "Denmark" in the "City, County, State, Country" search box. I think that's probably the best workaround.
Unless you wanted to search in the individual collections. In which case, here is the list of all their Denmark-specific collections.

In Ancestry there are several ways of searching. The best way is to click on the Search menu and in the drop down menu there is a item titled "Card Catalog". Click on it and it will take you to a menu of all the databases that are in Ancestry. Depending on what you are searching for type in the "Title" or "Keyword" box. So in this case you would type in Denmark in the Title box. Click on enter and you will get a list of all the databases for Denmark that Ancestry. There are 13 databases for Denmark. This then allows you to choose what database you would like to search. When you click on one of the databases in the list you will get a search box so that you can search that database. This is much more specific than the general searching of the search dialog box that you have been using. Make sure you read what is in the database before searching to be sure that what you are looking for will be in that database. Most databases have exceptions so check them out.
