Assenheim, Hessen - death in 1799 - Ehwald family - transcription help
The middle part of the second line of the entry is difficult to read (because of a crossed out word and number 0081), which is where Katharina Maria's maiden name would have been written. Fortunately, having a birth date from the baptism of Catharina Maria Ehwald (wife of Johann Jacob Kopp), I confirmed that this is the death entry for her, since the calculated death age is correct using the birth date of 6 Feb 1759.
The full page is the second attachment. I just need help to fill in a few blanks in my transcription.

Your transcription of the death record is correct. The note refers to the following records.

Comment:
While the maiden name of Katharina Maria is not clearly visible it does not appear to be Ehwald. It looks more like Hofmann/Hofmännin which was the maiden name of her mother Anna Agatha.

You are right, the maiden name of Katharina Maria looks like Hofmann/Hofmännin (I can see the name now) which (as you pointed out) was her mother Anna Agatha's maiden name. It makes sense that the scribe wrote "geb. Hofmann" because Katharina Maria was born illegitimate. Although later, after her mother married the father Johannes Ehwald, Katharina Maria took her father's name i.e. Katharina Maria's maiden name is Ehwaldin not Hofmann in her marriage entry.
