First document:
In the year 1750, on the 2nd of July in the evening at 9:00 pm to Mattheß Lützen [or Lütz] and his legitimate wife Anna Gertrudæ a little daughter was born to the world and on the 5th of the same month was baptized and received the name Susanna Elisabetha. Baptismal sponsors: (1) Eva Elisabetha Lützin from Dillendorff, reformed religion. (2) Johannes Thomas,. (3) Susanna Maria Lützin.
Second document:
1st column: 4th.
2nd column: December.
3rd column: Jacobus [Jacob] Schneider.
4th column: Joan Görg [Johann Georg] Schnieder and Susanna Elisabetha Leitz, Protestant ________? from Kan______?
5th column: Jacob Köfler?/Köhler? and Catharina Odermann, Catholic _______?

Your question: Do you know of a reason a family in this area would have one child baptized in Catholic church and the next in the Evangelical: perhaps this was a mixed (Protestant-Catholic) marriage.
