Translation of details of christening record & general Norway

First entry, Elling, 10 January 1844. I see he is uegte. Father Mons Poulsen Tretnes is a widower. Coincidentally, (?) he has a sister named Else Poulsdatter.. There is a possible death record for Mons in 1843 that needs confirmation. Is there more information here?
General record accuracy question: I understand things like birth dates can be iffy, but how about marital status? The records seem careful about the parties' status at marriage and on the censuses. This would be community knowledge? I have an ancestor whose primary marriage says ungkarl and census says both in 1st marriage but is linked to an earlier marriage, and a widower when he entered that. Likely two similar men?
I am interested in the Sami in Nordland. (Family story of Lapp ancestry.) Does anyone have some expertise with this?

First regarding your general questions. In the actual parish records you pretty well have to assume that the birth and christening records are the best dates you are ever going to get. They were recorded very close to the actual event.
Birth information in confirmation records tends to agree great with the birth records if the confirmation took place in the same parish. After all, all the priest needed to do was check back a few years, often in the same book.
Birth information in marriage records and death records tend to be less accurate. Birth information in census records, just like census records in the US even in the 1940s, tends to be quite questionable.
Regarding social status in marriage records, that, from what I have seen, is extremely accurate, particularly in smaller parishes where everyone would have known everyone else and all their business. Since that ancestor of yours is listed as Ungkarl in the marriage record, I can pretty much guarantee you without looking any farther that he was not married before and if someone put in Family Tree that he was, that is an error.
Now on to Elling.
Born 10 Jan 1844, died before he was christened. (which makes it somewhat unusual for him to actually have a name, most parishes would have recorded him as "udøpt drengebarn" rather than as Elling). Uægte so parents not married. They have names as you state. Ah! Here is why he is named Elling. He was hjemmedøpt, christened at home, by Elias Lerjorfald (?) on 6 Feb 1844. That final column records who notified the authorities about the illegitimate birth and I'm sorry to say I can't read all of it, but it does say "the reported father died 11th July. I think the rest has to do with his probate filing, but can't really say.
I'm going to take a look at the death records for both Elling and Mons but posts tend to erase themselves so I'm going to post this before it vanishes.

Entry 19 is definitely the same Mons Poulsen: https://media.digitalarkivet.no/en/view/2611/60 The name matches, the residence matches, burial date is the death date given in the birth record. He was only 36. No death cause was given. Died just about when Else would have been sure she was pregnant. Probably just a coincidence. Cause of death would probably have been listed if a scandal was involved.

[The index shows unmarried, age 50. The image of the page at https://media.digitalarkivet.no/view/38369/67 shows no such thing. Her name is crossed off, Edvard Larsen who might be 22 is overwritten. Her entry is found at https://media.digitalarkivet.no/view/38369/79 with the"Lapper" population, 4th from the top. The Poulsens/ Povelsens of Tretnaes are a Sami family]
Died 1898, a flattiglem in another household, unmarried.
