I've recently found out that my great-grandfather was born in Grenagh, County Cork. I have a birth date and know his parents' names, but don't have any other information about him. I've looked in the civil registers, but going through the parishes is going to be a task given the last name. The name is William Smith b. 17 Jan 1865, son of Michael and Margaret Smith.

There's some records in Grenagh parish, both civil and Catholic so hopefully you can find your ancestor and more about his family--https://registers.nli.ie/parishes/0058 which are indexed on FindMyPast.com or Ancestry.com.
Also, there's a great heritage centre for County Cork--https://www.cobhheritage.com/, there is a fee, but if you cannot find the records elsewhere then it's an option.

Just took a quick look in "Irish Genealogy", unfortunately ...
NO "Birth Registration" in County Cork around 1865 (± a few Years) ...
And, NO "Christenings"/"Baptisms" either ...

The website irishgenealogy.ie has all civil birth records from 1864 onwards. If you can't find him, either his parents didn't register the birth or he was actually born before 1864. I've never heard anything about non-registration rates being abnormally high in Ireland, but obviously it is a possibility that his birth wasn't registered regardless of how low the non-registration rates were.
I looked at the parish records from Grenagh, and thanks to the helpful date filtering feature at the National Library of Ireland was able to find the page for 1865 very quickly. There was no baptism for a William Smith on or around 17 Jan 1865.
The official "Heritage Center" for Grenagh and the surrounding area is at Mallow: see http://www.rootsireland.ie/cork-genealogy/ The Heritage center at Cobh appears to be a privately owned company. Both may be able to help you.

Unfortunately a child could be just registered as Male or Female and not given a name on the Civil Registration. Sometimes doing a parent search in FS can give some results. Hope you find them

Thank you so much for looking for me, and for the additional leads. The year of birth for my grandfather had always been under debate. His gravestone here in Toronto says 1865, but it could have been between 1863 and 1868.
