I find two Henry Pullens in Kirdford, Sussex, England. One marries an Elizabeth Pennicod in May 1787
Then, there are 12 children born in the same parish of Kirdford, Sussex to Henry and Elizabeth Pullen, between 1787 and 1807, with no distinction between the two families. How do I know which children belong to which Elizabeth beyond researching each child individually, hoping for clues?

You could always 'see' if there are any (individual) "Trees" on the likes of, "Ancestry_com"; or. "MyHeritage_com"; or, the like, that contain these Families - at least to give you some idea/pointers.

It is unfortunate that the Parents of, both the Bride and Groom were NOT recorded on such records.

I am afraid, just hard work; and, hopefully, getting 'Lucky' (with some 'clues') ...

Since you say there is no distinction, I'm assuming that you have looked at the parish register and confirmed that the clergyman did not note the occupation of the husband/father in any of the parish registers. Do you know who the parents of the Henrys and Elizabeths are? Maybe you could make an educated guess about the children based on naming patterns. https://www.family-tree.co.uk/how-to-guides/how-to-use-naming-patterns-to-find-your-ancestors/ Other than that, you might research the children with the least common names and if you can establish the parentage of one child, you may be able to assign the rest of the children based on birth spacing. Also I would check to see if any of the parents died. You still might not be able to tell which Henry or Elizabeth it is, but then at least you would know it was not them that had any remaining children. It may end up Henry and Elizabeth A and Henry Elizabeth B, until you can find additional clues. This is a tough one, good luck.

Looking at the image of the 1841 census of Kirdford might give some clues. The Henry that is 85 and his wife Elizabeth is listed as 70 have some interesting neighbors. Although it is not a large village and so people might live next door that are not necessarily children or siblings but they might be. Henry age 85 has on one side William and Sarah Pullen and then the next door down is John Durrant. On the other side is Arthur Durrant . These images are on Ancestry.
The other Henry Pullen has a Sarah Hook living with him along with 10 year old Mary Hook. A marriage for a Sarah Pullen to a husband before 1831 last name Hook might help.
I would also be looking for death and marriage records of all the children listed for these two Henry and Elizabeth Pullens to see if their mother's last name is given at their death or marriage. Along with looking for witness couple names for all the children.
They are both listed as Ag laborers in 1841 so it seems that won't differentiate them.
