Transcription problems when the original record is not in English
Many original Louisiana documents (as late as the early 20th century) are either completely in French or partially in French. I looked at the Assumption [Parish, Louisiana] {rebate Estate Case Files, 1858-70, 1865-66. See image 660 for one example.
The transcriptions from French in such records are meaningless, and often look like gobbledygook-gook.
Could something be done about this?

Until FamilySearch is able to bring in other foreign languages for AI handwriting recognition, I highly recommend Transkribus. I've had terrific results there:

You are correct. The machine created transcriptions from French are a known issue. Our initial goal is to get the tool functional in English and Spanish, the two languages with the most users, before adding additional languages. They will come in time but for the moment, we are still working the kinks out of English and Spanish.
I have not tried Transkribus but have heard good things about it. Thanks for sharing.
