It would help to know the name of the parish where this record comes from.

It seems that the symbol is not the first letter of her last name, but the sign "NB" for "nota bene" (note well) which normally points to a remark. It might help to see the whole page if there is a remark somewhere.

The parish is Spraitbach in the Wurttemberg-Stuttgart Diocese, and I don't have the whole page. I can get it later today and post it, but if you can access the locked family search records it is FHL film 8654278 image #321.

Here is the whole page. There did not appear to be a note. But I noticed that notation NB on several other records but never saw what I thought was a remark. I looked several pages before and at the page after to see if there was anything, but didn't see anything.
I'm also attaching the family record from Mutlangen for this couples daughter. My cousin and I think her mother's last name is Rieger, but maybe you have a different thought.

I read the name of the town as written in the record as: "Brändt". This could possibly be the place "Brend" which is approximately four miles southwest of Spraitbach.

There is no last name recorded for the bride in this record -- as Ulrich Neitzel said what is written after her forenames in the record is the symbol "NB" which means "note well". Reviewing the entire image, I don't see any remark which is a reference from the "NB".
Regarding the family register you attached: Since this question is now "buried" in a long list of responses to your original question, I would suggest you post the family register and your question as to the mother's maiden surname as a new question so all members of the German community can see the question and the image and help you out.
