Your guess about "Pasch:" isn't wild at all. The colon at the end of the word indicates that this is an abbreviation and refers to "Pascha" = Easter.
What appears to be the Roman numeral III before the word puzzles me, too.
I would suggest the best way to handle the baptismal date until and unless someone recognizes "III Pascha" is to state that the baptism occurred between 23 March and 28 March 1717.

Could the III refer to the third Sunday before or after Easter? I've seen the Roman numerals used like this in entries for wedding banns, which were read, e.g. I, II, III post Trin[inity].

Possibly the third Sunday after Easter but not before Easter since that would be 7 March 1717 and the child was born on 23 March 1717.
The Monday after Easter is called: 2.Pascha. So perhaps this is a reference to the Tuesday after Easter, i.e. 3.Pascha?, which would be 30 March 1717.
If the third Sunday after Easter, that date would be 18 April 1717, but that seems to be a very long time to wait to baptize a child born on 23 March 1717.

Thank you both for your responses. I will record the date as Robert suggested - between 23 and 28 March. However, I do like the notion that it might have been 3 days after the birth date. Your comments are very helpful.
