Brick Wall
My surname is Humrick, it was Originally, "Hummrich". We know that my ancestor, Wilhelm "William" Hummrich (1831-1887) immigrated here in the late 1850s with his wife Katherine Strodter (1830-1877), leaving her father, Weimer Strodter, behind to go to America. Unfortunately, I cannot seem to find any records of Weimer, Katherine or WIlhelm. I do know that they were born in the early 1800s in Nassau, present-day Hesse.

Have you found his naturalization records? This one says he arrived June 1851. (possibly the 1 could be a 7).

Good news! I found Katherine Strodter's birth/baptism record in Nordhofen, Hesse-Nassau. Its the first entry on this page (entry 9)

I'm not proficient enough to translate the parents information but they are listed and the fathers name appears to be Weimer. Her surname appears to be spelled "Strüder" in these records.
Here's how I found it. It may help you in future searches. I noticed that a Johann Peter "Stroedter" was buried in the same cemetery as Katharine Strotder. I found his records on familysearch and collected them into ID LW52-YT4. They showed that he was also from Nassau. One of his Ohio death records said he was born in "Northhoven" Germany. That had to be an "English" version of a German village so I looked in Meyers Gazetteer for a Nordhofen in Nassau and found one:

I looked in the familysearch catalog for Nordhofen and found they had unindexed church records for the right timeframe that were viewable online:
I found Johann Peter's birth record first to make sure I was in the right place and then Katherine's. I haven't looked but you will likely be able to find her marriage record and Wihelm's birth record if he is from the same town.
Since the records aren't indexed it will be a bit tedious but you should be able to look through them for the surname Strüder and find her families records. Might be a good wintertime project for you!

There are many Hummerich's in Nordhofen but Wilhelm was actually born in nearby Quirnbach. Here is his 24 Mar 1831 birth record:

I did a very quick look at the marriage records in Quirnbach and Nordhofen and didn't find a marriage record for Wilhelm and Katherine in the 1850s in either village. I might have missed it or they may have married elsewhere.
A brother (Johann Phillip Wilhelm) of Katherine born in Jan 1824. This might be the Philip living with her family in the 1860 census.

The brother Johann Phillip Wilhem b 7 Jan 1824 that was probably in the 1860 census as Phillip is buried in the same cemetery as Katherine.

Here is the 1850 death record for Katherine's father whose full name is Dietrich Weimar Strüder (it might be spelled Ströder . It's the second entry. Gives his birth date, parents names, marriage date and wife's name (Anna Maria Remÿ if I'm reading it correctly), and number of children.

It's the second entry on the page. Entry #1 for 1821. It gives their birth dates and parents names.
I think it says Wilhelm's father and grandparents are from "Maxain" which is probably the village spelled Maxsayn on the Meyers Gazeteer map (just north of Nordhofen and Quirnbach).
