The definition for "Oekonom" = small farmer comes from Ernest Thode's German-English Genealogical Dictionary.
Another word for a small farmer is "Gütler" and the following information about a "Gütler" may give you some insight as to what a small farmer was considered to be in Bavaria (where Nordhalben is located).
I found the following definition for "Gütler" (which I translated) in the following reference source: Reinhard Reipl, Wörterbuch zur Familien- und Heimatforschung in Bayern und Österreich, 3rd edition (Waldkraiburg, Germany: R. Riepel, c2009):
Gütler: managed a farm that made up less than 1/4 and more than 1/32 farm and whose fieldwork was usually run by 2 oxen.
Units of land measurement varied from place to place in Germany. The following article about the "Hoffuss" (which was a farm classification system in Bavaria) from the German Wikipedia indicates that if a full Hoffuss was the size of a standard rural farm, then the size of the farm of a Gütler was approximately 1/8 of a Hoffuss: https://de.wikipedia.org/wiki/Hoffu%C3%9F

Looking at another record you posted, I believe the column for the priest in the record above for Maria Fleischmann should correctly read:
Stadter, priest. [where "Stadter" is the priest's surname].
