Geszteréd's Jewish residents were recorded in Balkány, which may account for part of the confusion, but Sándor -> Simon takes the idea of "only the Hebrew name matters" to new heights.

I love you, Julia! Thank you so much for your help! I have a conundrum here and maybe you can help me logic this out.
My great-grandfather, Sandor Kertesz, was born in Balkany 15 DEC 1882. The only child recorded born on that date for the Jewish registry is Simon Kandel. (File 25 here: https://www.familysearch.org/ark:/61903/3:1:9398-9RBY-K?i=146&cc=1787825 ).
In this record, Simon’s father’s given name, Jakob, matches the information I have from Sandor’s (Alex in US) marriage certificate. Also in this record, Simon’s mother’s given name, Saly / Zali Braun, does not match the information I have from that same marriage certificate (Regi Fischer on the marriage certificate), but I am not too concerned about that. Saly / Zali Braun died in 1887 shortly after giving birth. I expect that Jakob remarried (I’m still looking).
I can add that I was told Sandor’s Hebrew name from his gravestone is Zalman and that he told the family that Kertesz was not the original name. He sailed from Hamburg 24 MAY 1905 and arrived in NYC 04 JUN 1905.
So, which is the most likely scenario?:
1) My great-grandfather, Sandor, did not know his correct birth date? 15 DEC 1882 versus 10 AUG 1882
2) The annotation of name change was entered in the wrong person’s register? Annotated on Sandor’s instead of Simon’s
3) My great grand-father Sandor never officially changed his surname, but simply adopted Kertesz prior to sailing to the US?
4) Simon is my great-grandfather, hated that name and figured since he changed his surname, he might as well adopt a new given name, too?
5) Any combination of the above?
6) Another scenario that I have not thought of?
I would love to get a photocopy of the original record (microfilm 30797 image 1057 carton 1 Name-change registers year 1904 page 18 line 31 [thank you for providing that reference!]) from the Hungarian National Archives. Can you provide guidance or advice on how to obtain this record?

Short of showing up in person, I don't know how to access Hungarian National Archives microfilms. (And since showing up in person is highly unlikely, I don't actually know how that works, either.) People have commented on the Hungarian genealogy email list that the files can be informative, but they didn't explain how they got 'em.
Some random possibly-relevant observations:
The August birth was entered as being in Balkány proper, while the December one was entered as being on an outlying farm, Mogyorós puszta. There were actually two of these (Nagymogyorós and Kismogyorós), both belonging to Balkány, and both still exist (http://www.ksh.hu/apps/hntr.telepules?p_lang=HU&p_id=26958). They're over 5 miles south of town, almost on the county line; the distance to Geszteréd is basically the same.
Sándor = Alexander. Simon = Simon. Zalman = Solomon. Neither Sándor nor Simon have anything much to do with Zalman/Solomon, beyond sharing an initial in some languages/forms, so I kind of wonder: did Jakob simply forget which secular name they decided on at his son's birth? If his wife died shortly after, there would've been nobody to correct him calling his son Sándor until said son went to get a birth certificate for his name change. This thought is supported by the fact that the annotation about the name change is on Sándor: clearly the person doing the annotating knew the name-changer as Sándor, not as Simon as the paperwork said.
I notice that Alex's draft registration says he was naturalized (https://www.familysearch.org/ark:/61903/3:1:33S7-LBT4-LG6?i=4258). Have you had any luck tracking down some of that paperwork?
I can get neither FamilySearch nor Steve Morse to cough up an arrival on June 4, 1905 that looks at all likely to be your ancestor. What name did he travel under, and how was it indexed?

I notice he lists a last residence of Eperjes (now Prešov, Slovakia). That's a good 90 miles (as the crow flies) north of Balkány and Geszteréd. I haven't figured out the listed occupation: maybe "tinsmith"? I suppose that could've evolved into the "master plumber" listed on his draft registration....
