How do I seal a child to Parents if the child is "Illegitimate" and the father's name is unknown?
After very careful research I have 3 different children that have an 'Unknown" father...that is to say they are noted as "Illegitmate" or the father's name is not shown on any documents, only the mother's. I think that they can then be sealed to grandparent's but then do you simply bypass the mother's name and move back one generation or do you use the Mother's name and the Grand father's?

You are right, the child will need to be sealed to the mother's parents. Here is a link to an article that explains how to do that. I found the article by clicking on the ? at the top of the page and typing "grandparents" in the search box.

You are very welcome. It is a bit obscure. One needs the correct search term which is not intuitive.

@Heidi_Annette_Post If you sign in to FamilySearch and then click the question mark icon in the top right, a box pops up. In the search field at the top of the box, enter "policies for sealing deceased children". Click the first title that appears in the search results. These 2 sentences from the help article are particularly pertinent to your question: "A deceased child is usually sealed to birth or adoptive parents. Where justification exists, deceased children may also be sealed to stepparents, foster parents, or grandparents."
If it feels confusing to get things lined up in Family Tree to seal to grandparents, for instance, you might want to call Support and the folks in Family Tree Support can help you. To get a phone number to call (or the live chat or email options), click that question mark icon again and then click Contact Us (at the bottom of the pop-up).
