What do the colors on the fan chart signify?

That depends on what "Type" of "Fan Chart" you choose ...

ie.

- Family Lines [ NO Colours ]

- Birth Country

- Sources

- Stories

- Photos

- Research Helps

- Ordinances [ for Members of the Church ]

Whereas ...

.

The "Invert Colours" is just that (ie. like changing "Day" to "Night", so to speak), may be easier on the "Eye" for some.

.

And, the example in the "Image" that you provided was that on the "Type" of "Family Lines".
