It depends on what it is. A merge can be undone, but it's a bit complicated depending on how much was moved over during the merge. I have had some that are quite simple, and others that required much more work.
Changes in dates, names, and places are simpler. Sometimes when you go to the change log, you are given the option to "restore" what was changed. If not, you just need to put the correct information back in.

Sometimes, the changes are beneficial ... 'sometimes', being the operative word.

IF, you are certain, have checked; and, the "Changes" are, NOT correct; and/or, NOT acceptable (for whatever reason); THEN, you can change those changes ...

You can go to the "ChangeLog" for the individual/person (or, Couple) to view the changes; and, change them back again (ie. "Restore"); or, change them to new ones.

You can can make whatever "Changes" that you may wish by accessing the "Edit" link for whatever "Details" that you wish to change.
