If you are looking for someone from Greece around 1900, start with the Diocese Archives. You will need to know which diocese your ancestor belonged to, and also to see if it still exists. The priests kept the books of births, marriages and deaths. The priests traveled to different villages to support the locals, performing the baptisms, marriages, etc. For this late of a time period (1900's) you can also get in touch with the mayor's office from your place of interest to see if they have the records (they should). Every place is different so it's a different search every time. It's also interesting to know that the "newer" bm&d records are better and have more information that the older ones.
Civil registration in Greece began in the mid 1800's (roughly 1840 -59; not too long after Greece's independence. Many of the civil registrations were hand written from the books the priests kept at the churches.
