Best practice/defaults for photo access
I added a few photos into the Family Group Tree. They defaulted to Public.
I'm wondering whether defaulting to limited access within the group is more appropriate? Might avoid a few red faces.
Also assuming a profile has all photos with limited access within a group while a person is alive, what might be expected when marked as deceased? Photos become public? Remain limited access within the group? OTher?

How did you add photos into the Family Group Tree? When you add from a individual's Memories page, you have the option to make public:
If that is not checked, it will import as Limited Access.

My apologies, you are correct. Memories added to a person in a Family Group Tree are set by default to have visibility only to that group. Not sure what happened with my earlier testing.
My questions remain, though:

Thank you. I think you noticed the visibility defaulted to "Public" when you uploaded to your main "FamilySearch Tree". That has always been the default, before family groups, but I'm not confident it was always clear to people.
Now that we are calling a Living person in your FamilySearch Tree a "Private person", I would support memories defaulting to "Private". The "Make Memory Public" checkbox could be added there as well. I'll pass along your feedback, so feel free to add any additional thoughts.
But for your next question...
Memories do not automatically change from "Private" to "Public" or from "Limited Access" to "Public" when the contributor dies. This was one reason we really pushed for family groups because, with our current model, "Private" memories are effectively lost when you pass away.
Assuming you create additional group admins, the idea will be that they can switch a memory from "Limited Access" to "Public" for you. I do not believe this has been implement yet, but I will ask around and bring it up with the Memories team.

Thank you for the feedback @American Family Historian. It will be interesting to see how this evolves, but the option to have limited visibility for some photos is a very good one, and certainly solves the problem of private photos being lost.
I'm looking forward to seeing what the admin and members of the group will be able to do as the roles take more shape.
