I have sealed several of my great grandfather's children to him and his wife Assunta, but the other children have an unknown mother (Ignata). Should I just assume they ARE my great grandfather's children and seal them to him and his wife?

the correct term is NOT "ignAta" but "ignOta", ie "unknown"

Have you found the birth, marriage, and death for each child? The mother may not be unknown in every record, especially if she's listed for some of the siblings.
