Understanding Mexico church records
I have an ancestor, Juliana Longoria, which on her birth record only shows the mother's name - Francisca Longoria. Then the only marriage record I can find for Juliana and her husband, Jose Anastacio Flores, just has him listed, the date and the names of his parents. Nothing about who he married or her family. Would this point to her possibly being born to a single mother?

The record for Jose Anastacio Flores is actually a baptism record. Even although the left hand side is marriages the R hand says baptisms.
In my indexing experience, when it says hija 'natural' it is a single mother.
I hope that helps to make sense if these records.

Yes the birth record for Juliana says she is an "hija natural". This means she was born to a single mother.

As Karen stated,the record for Jose is actually mislabeled and is a baptism record, not a marriage. He is listed as "hl", which is an abbreviation for "hijo legítimo". This means the father acknowledged him and took responsibility, usually it means the parents were also married as well, though not always.

These are transcript summary of the originals, I imagine that some made a mistake o the column title, as "baustiso" and not "conyugue" like all the others... I did a quick search and found the marriage information file for Jose Anastacio Flores, but since the record is quite damaged you cant make out the rest of the info so thats why only his name appears in the index no spouse...
