Translating parents in birth record
The birth record for Maria DiRosa doesn't have a mother listed where I'm used to seeing a mother's name. Could anyone translate that part for me? There are a lot of nons..... She is the birth in the top left corner.

They weren't married, so that's why she's not listed there. It's how the civil system worked during a short time in Italian history that's been detailed here by others in various posts. The image is too low resolution for a proper translation. Do you have the link to the record?

Fortunately, the parish registers are available from the Agrigento Diocesan archive. This appears to be her baptism at S. Erasmo church:
Looks like her mother is Giuseppa Caramazza?

And to clarify what @DangKwei said, the couple may have been married in the church, just not in a civil ceremony, so for civil purposes they weren't married.
