Without seeing an actual image it is difficult to determine why the children's names would be underlined.
Typically names are underlined in records to indicate that this is the principal person the record is about.
Sometimes, underlining is added at a later date to make it easier to find the name of the principal in the record.

Would you assume someone was working on that particular family so went thru and underlined them for that reason? These were confirmation records between 1731-1744 in Leinsweiler, Bayern. Does that help in an assumption?
