Is anyone familiar with a place called Llandy in Carmarthenshire?
I have come across some people in my tree and they have the place of their birth or christening as Llandy, Carmarthenshire, Wales. I have not been able to locate a place named this and am leaning toward it being an abbreviation. I do see other information which leads me to believe it might be associated with Llanedy, or perhaps Llandybie. Does anyone have any thoughts on where this might be? Thanks.

I googled Llandy and came across Llandysul which is a small town and in the county of Cardiganshire now Ceredigion, Wales.
So, no not Carmarthenshire and then Llandybie which is in Carmarthenshire. Can you please post the link to the record you are looking at? Looking on the map they are not far apart. The problem is when records were written, as you rightly noted, abbreviations were routinely used and also parish borders and ecclesiastical borders didn't alway align with county borders.
It might be worthwhile, if there are several entries on the same record, to make a note of other place names and see where they fit with Llandybie or where they are on an old map as well as a new one. New maps will show modern parishes and boundaries.

There is a Llandybie in Carmarthenshire, Wales but checking the old maps from the 1800's it appears to have always been called Llandybie. This is one of the places you suggest in your original post. My thought's like yours is that is could be an abbreviation but I thought it was worth checking the old maps.
