Are there any Carpenter Guilds in Sachsen-Meiningen?

There were. Guilds are local, that is, town-specific. Also, they pretty much lost their power during the 19th Century, if not before. What exactly are you trying to find?

My relative born in (Sone berg Sachsen-Meinegin) 1845 came to America 1871 as a (joiner) began his own cabinet making business in Canada. I am looking for his family. (soneberg) known for toymaking

There is no town that I know of in the Kries of Meiningen called Sone or Soneberg / Sonneberg based on the book Map Guide to Parish Registers Thuringia Vol. 24 by Kevan Hansen and published by Family Roots Publishing Company. There is a Kries Sonneberg as well as a town Sonneberg within the Kries Sonneberg. These are both near the Grandduchy of Saxe-Coburg-Gotha not too far from what was the historic Duchy of Saxe/Sachsen-Meiningen. I have done quite a bit of research in Sachsen-Meiningen because that is where my people came from and I have visited many of the towns there. Do you know if they were from town of Sonneberg or the Kreis? Very little for this area has been digitized yet. However, Archion started digitizing the records in the Landeskirchenarchiv Eisenach in January 2020, which include Kries Sonneberg as well as Kreis Meiningen and others. Once you determine the actual town they were from, you can contact the local historian or mayor for that town. The rathaus (town hall / city building) may have additional records not at the church archives. The rathaus for the town where my people lived had many additional records including records showing what happened to my ancestors family property after it was sold and my family moved away. They may have guild records too or know where they are stored.
If you want to research your family more quickly, you might consider hiring someone that researches at the Landeskirchsenarchiv in Eisenach to get copies of the records for you. If you contact the archivist in Eisenach ( archiv.eisenach@ekmd.de ), they will provide you with a list of researchers for hire.

Dana Palmer made a very valid point, because if your ancestor was actually from a village within this Kreis, he and his family would not be found in the city records. The records really are locality-specific. So you must know the exact place where this family lived.
If they lived in the city proper, those church records have not been made available on www.archion.de yet. But a number of parishes from this area are already online. You can check the website www.archion.de for free. You only need to pay to access the actual images.

Thank you so much! My relative could not spell properly! He was from Sonneberg the "city". I have looked at landeskirchenarchiv to find the city but wasn't sure what to do with the information on that site. Thank you for your suggestions. My ancestors name: Schack. I do know he was born in Sonneberg, if the family stayed there until immigration I don't know. Thanks again for your help.

If you are not 100% sure the town they are from, try having a researcher there obtain a copy of your ancestors auswanderungen record (emigration record) before searching the parish registers. Your ancestors had to get permission to leave the area before going to a new state or country. If they didn't they will be listed as leaving illegally. (I've seen these in the indexes). I found an auswanderungen index to Sachsen-Meiningen online. I'm not sure if the index for Sonneberg is online yet. Baerbel might know. If it's not online, contact the state archive. Mine was Thüringisches Staatsarchive Meiningen. They should have the auswanderungen aus dem Herzogtum - both the index and the official journal of the government for your dutchy. These records are super useful because they list the town of residence prior to emigration. This might not be the exact town they were born in, but if you do a circular search of the surrounding towns, you can often find them.
