The German word used seems to be Steinbrenner (literally stone burner). I've never encountered this word or occupation before and couldn't find it in any of the usual dictionaries. However, it seems logical to interpret it as either a brick maker or a lime burner (German: Kalkbrenner). Meyers Gazetteer lists a Kunststeinfabrik (artificial stone factory) in Bredstedt and on the map there is a place called Ziegelhof (brick court) nearby. Also lime kilns were found is this area:
