I'm missing some of the words for this birth record from Ellershausen, Frankenberg, Hessen.

It is very helpful to the translator to include your attempts at transcription and translation since you are more likely to be familiar with surnames and places which are the most difficult items to decipher. You did very well. You have a mixture of German and Latin in this record.
I copied your original work and added edits and addtions in bold and removed question marks when you were correct:
Baptism: 21 Oct 1826, Died: 24 Nov 1865
Ger: Henrietta, des Joh. Peter Schöneweißen, et uxor Susanna, einer gebornen Armand, Tochter, nata 17ten meridie.
Gevatterin: Henrietta Armand, der Mutter Schwester.
Eng: Henrietta, of Joh. Peter Schöneweiß and Susanna, née Armand, daughter, born the 17th at midday.
Godmother: Henrietta Armand, the mother’s sister.
Comments: The child was born on 17 October 1826 at midday.
The "en" suffix on the father's surname is a genitive grammatical case ending.
The Latin words in this record are:
et uxor = and his wife
nata = born (feminine form).
meridie = midday.
If this is a Protestant record, "Gevatterin" would translate best as: baptismal sponsor. The suffix "in" indicates this is a female baptismal sponsor. If a Catholic record, then "Godmother" is correct.
By the way, it's okay to move the word "daughter" to the beginning of the record if you prefer as follows:
Henrietta, daughter of Joh. Peter Schöneweiß and Susanna, née Armand, born the 17th at midday.
