a birth record or are they considered baptism records for Diederich Vitzler

For the death, yes you are correct that Joh. Eberti Fitzler von Ödingen was 77 when he died and the other record is a baptism record. Local parishes didn't really document the births of children but rather baptisms of the children. Their baptisms are widely considered birth by genealogists.
