Hello Jenny,
The Latin construction in this record is rather strange. Catharinam viduam is actually an accusative case, not clear to me why. Her name is Catharina and she is a widow (vidua), but if she was Adam's widow it should read "Adami Polemani vidua Catharina".
The last words in the record are "soror matris", meaning as you correctly infer "the mother's sister". I can't interpret the letters/words before (after "Syben"), so I am not fully sure about the connection to Gretken Syben, but it seems most probably referring to her.
Do you have another source confirming the first name "Ernst"?

Thank you. I will need to track down Adam Poleman (Pohlman) to see if I can find a marriage for him as well as a burial.
