Short answer: 'Yes', of course, you can.
.
I have done many.
.
I have copies of their "Birth Registration" where the was NO 'Given'/'Christian' name(s) recorded.
.
Just with, the "Gender" (ie. "Sex"); and, "Parents" names.
.
For "Illegitimate" births, there was ONLY a Mother's name, 'NO' Father's name, that is another matter. You need BOTH "Parents" to do the "Sealing".
.
When you "Print" the "Card" for the "Temple" Work, the "System" AUTOMATICALLY includes the "Prefix" of, either, "Mr" or "Miss" (in 'Italics'), depending on 'Gender'; as, there is 'NO' such 'Given'/'Christian' name recorded.
.
Here are some "Knowledge Articles" in 'FamilySearch" on the matter:
.
Temple ordinances for unnamed child
.
Temple work for stillborn babies
.
Temple work for children who die before age 8
.
Sealing-to-parent ordinance when name of parent is unknown
.
I hope this helps.

This portion of the above named Knowledge Articles was particularly interesting to me! You can learn something new every time you ask a question!
"If the child was never named, or the name was not recorded, do one of the following:
- Leave the child’s first name blank. Enter the father’s last name.
- If you do not know the father’s last name but know the mother’s, enter her last name instead.
- If you do not know either the father’s or mother’s last name, enter a question mark (?) as the child’s first name. Leave the last name blank."
