I have some questions mixed in with the timeline below regarding this couple, and would appreciate any input.
1860 - Jorgen Johannessen in Almind, Veije

- What does it say after the name of Marie’s mom, Johanna Kathrine Lyngby?
- Why would Jorgen and Marie marry again in a different place after their daughter was born?

- What are the 1, 2, and 3 lines under his name?
I’d like to find Jorgen and Marie in the 1870 census, mostly Jorgen. I don't think he's in Almind, where he lived up to 1860. I tried to search in Åstrup, where they got married in 1871, but I can’t seem to find the records.
Marie apparently died sometime after her son was born in 1871 and June 1874. I tried searching for the Vilstrup death records, but can’t seem to find them either.
Are those documents online?

1st Question: The 4 November 1871 record is the date of the betrothal/engagement. The 16 December 1871 record is the date of the marriage. They became engaged/betrothed in Aastrup (Åstrup) parish in Haderslev county and then married in Taps parish in Vejle county. I don't know the reason for that but that is what the records show. The marriage record gives Jørgen's father's name as Johannes Laursen (his mother's name is not recorded) and Maria Rosine's mother's name as deceased Johanne Kathrine Lyngby (her father's name is not recorded). The word after Johanne Kathrine Lyngby looks like " Veien (Vejen)". There is a parish in Ribe county named Vejen. But I don't know whether the 2 names are the same place. However, the 1855 Denmarks census shows a person who may be your Marie Rosine Lyngby with her parents in Vejen parish, Ribe county. That record is here: https://www.danishfamilysearch.com/cid16351893. The mother is Ana Catrine Hjort, but that is not too far from Johanne Kathrine in the marriage record.
2nd Question: The people mentioned in the lines 1, 2 and 3 are the witnesses/godparents at the christening. They are 1) farmer Iver Raun in Grødebøll(?), 2) batchelor Christian Petersen Holm at Kjestrup(?), and 3) maid Mathilde Jensen in Grødebøll.
3rd Question: If they were in Åstrup or Vilstrup, Haderslev county during the 1870 census, those records don't exist. This site can show what censuses in Denmark have been indexed and which have not: https://www.dis-danmark.dk/kipkort/index.php .

Happy New Year. I didn’t intend to put all of that in one post, so thank you for answering all the questions. That’s good to know about the betrothal vs marriage. And yes, I think that is Marie with her mom and grandparents in the 1855 census. Thanks.
Oh that’s so disappointing about the 1870 census. I wonder if it has to do with what was going on with Germany. Thanks for the index link, though. That’s really helpful.
