The genealogically important information in this probate is given on the preceding page. "The widow Johanne Ingebrethsdatter Smidevold" is mentioned near the bottom of the page in the left-hand column of the right-hand page.
Near the top of the right-hand column of the same page, "5 children" are named along with their ages: Ole Hansen (16 years old), Ingebreth Hansen (6 1/2 years old), Hans Hansen (3 years old), Anna Hansdatter (13 years old), and Christi Hansdatter (1 year old).
I do not see if it tells where Hans Olsen is from. However, this is a very difficult document to read, so that information may be there, but I can't see it.
I would suggest looking for farm books from Tysnes which may be able to help with his place of origin. There is one book listed in the FamilySearch Catalog (Tysnes, gards- og ættesoge) which may contain the information you want on Hans Olsen. I can look for it next Tuesday or Wednesday when I am at the FamilySearch Library in SLC.

In looking at this probate a little more, I have come across a different age for Christi Hansdatter. On the second page in the left hand column about 3/4ths of the way down the page, it appears she is 10 years old, rather than 1 year old.

I was able to find Hans Olson in the farm book for Tysnes. If I can I will attach an image that I took with my phone. He is identified as Hans Olson Nesbjør, Strandvik (1742-86) and this farmbook says that he married Johanna Ingebrigtsdtr. Støo, Kvinnherad. She was born in 1746 and died 1816.
Their children match the ones in the probate: Ola (b. 1771), Anna (b. 1774), Kristi (b. 1777-d. 1788), Ingebrigt (b. 1780-d. 1788) and Hans (b. 1784-d. 1788).

Looking in Strandvik parish and Nesbjørg farm you see Hans (b. 1742, married 1771 to Johanne Ingebriktsdtr Støen) in the following image (the pencil is pointing to him. His father is Ole Torstenson Nesbjørg (b. 1700, d. 1790) at the top of this entry (right under "Br. nr. 2."). Hans' mother is Kristi Olsdtg. Fugleberg (born 1706, d. 1761). This page also indicates that Hans has a sister, Guro (b. 1746-d. 1824) and a brother, Ole (b. 1750).

I forgot to mention that Norwegian farm books are great secondary sources. But if you can find the original birth, marriage or death records, that is preferable.
