Translation of the first record:
Birth: Greiffenstein, 21 June 1796, 10 pm-11 pm.
Baptism: 26th of the same month [= 26 June 1796].
Parents: Jacob Wilhelm Wallbruch and Anne Christine, née Daniel, his wife.
Witnesses: Johann Georg Kayser, Philipp Henrich Daniel, Philippine Bott, wife of Johann Henrich Bott, and Johanette Wilhelmine, surviving legitimate daughter of the late Johannes Wallbruch -- all from Greiffenstein.
Child: Johann Henrich. Died 31 December 1799.

Birth: Greiffenstein, 1 March [1805].
Baptism: 10th of the same month [= 10 March 1805].
Parents: Jacob Wilhelm Wallbruch and Anne Christine, née Daniel.
Witnesses: Philipp Henrich Daniel from here, and Catharine, wife of Jost Wallbruch in Ehringshausen, then Conrad Wilhelm Neuhard from here.
Child: Henrich Wilhelm.

Thank you immensely for all these translations you have assisted me with. There are many many more I will be requesting from this german community site. These records are just appearing so quickly as I search the Archion site that I feel I should apologize if I am overwhelming you all with my requests, but I must work quickly as my health issues are in remission. Thank you so very much.
So a question: When a record says " surviving legitimate" daughter or son of the late..." Does this mean that this son or daughter is the only living child of that person? Can I use this as a guide to search deaths for other siblings in the family prior to that date of the record?
Also if there is a cross symbol after the infant name with no date notation--what does that mean?

These are good questions.
"surviving legitimate child" does not mean that he/she is the only surviving child -- the deceased person could have other surviving children as well. So you cannot use that as a guide to search for deaths of other siblings prior to the date of the record.
The small cross symbol (that often looks like a + sign) indicates that the person died. The parish scribe chose not to include a death date for reasons only known to the scribe. Without a date after the cross symbol, you don't know if the person died soon after birth or years later as an adult.
