Thanks very much for the list of German occupations. It's quite comprehensive.
My usual reference source for German occupations is:
Ernest Thode, German-English Genealogical Dictionary (Baltimore, Genealogical Publishing Company, 1992).
Thode defines "Knecht" as: servant; farmhand; apprentice; errand boy; laborer.
