I would start with son Heinrich Gottlieb Sauerbrey (b~1849) since according to familysearch ID LTXK-ZJT he married Anna Catharina Maria Mueller (b~1852) in ~1874 (per 1900 census and 1st child born 1875). His son Wilhelm Carl Louis Sauerbrey was baptised 17 Feb 1875 in Bremen according to the record attached to his ID.

Family search has extensive holdings for Bremen in the 1811 to 1875 timeframe but only the births are indexed. And the actual images are only viewable at a Family History Center (FHC). See the entire list of Bremen films here:
I suggest going to the closest FHC and look up the image for the 1875 Baptism. Hopefully that will give you more information about where the father Heinrich Gottlieb Sauerbrey (b~1849) is from. (His baptism doesn't seem to be indexed in the Bremen records). The baptism of his wife, Anna Catharina Maria Mueller (b~1852), might be this one indexed in the records:

so I would look up that image also.
Then I would look for the marriage of Heinrich Gottlieb Sauerbrey and Anna Catharina Maria Mueller by starting at the end of 1874 and work backwards in time in this film (from the list above):
Heiraten 1873-1874 Film Number 1344207 DGS number 8244937
if no luck I'd go on to
Heiraten 1871-1873 Film Number 1344206 Item 2 DGS number 8276842
Since Anna Catharina Maria Mueller was born ~1852 I wouldn't search for their marriage any earlier than 1872. If it was recorded in Bremen it will likely be on the 1873-1874 film. Hopefully it will have their parents names and the places where the parents reside, or at least where Heinrich is from.
If you have any trouble reading the records feel free to post them on here for translation. Make sure you download the highest resolution image possible of the entire page or pages.
Once you determine what village(s) Heinrich and his parents are from you can make a new plan for how to find their records.
While at the FHC I would also look at the Bremen Familienregister (Stammtafeln)-Index 1823-1877 Film Number 1344393 Item 2 DGS number 8101491 to see if Heinrich Gottlieb Sauerbrey is listed and then find the appropriate Familienregister for him from the films listed.

I see one of the films listed for Bremen includes an Index of marriages. Film 1344391 DGS 7994931 Titled "Geburts-Index 1867-1875 S-Z Heirats-Index 1811-1856 A-Z Heirats-Index 1857-1875 A-Z Heirats-Index 1811-1850 A-Z (Bräute) Heirats-Index 1850-1875 A-Z (Bräute)".
It may save you a lot of time to look through this index first for their marriage.

I did find New York Death record for Heinrich Gottfried that gives his birth date as 16 Mar 1849. It also identifies his father as Christopher and mother as Wilhelmine Asheninohr which I'm sure is misspelled in the indexing. Unfortunately only the index is on familysearch, no actual image was viewable.

There is also this interesting death record for Herman's son Frank that incorrectly lists his mother (who should be Doris Lilau) with what is probably his grandmother's name Wilhelmina Ashermor.

So it looks like Christian/Christopher's wife is probably something like Wilhelmine Ashermor.

Here's a great New York marriage record for a Carl Sauerbrey, son of Christian Gottlieb Sauebrey and Wilhelmine Ashemoor. Carl was born 1858 in Wagenfeld, Hanover, Germany.

Maybe this Carl is a new brother or maybe he is Wilhelm or Hugo? But now you have a pretty good idea of Christian's wife's name and that they were in Wagenfeld in 1858.

This seems to be Heinrich and Anna's April1880 immigration log. Wilhelm and Carl are listed but for some reason Henry Jr isn't. It states they are from Hanover which is consistent.
