My comments: You are most likely familiar with the places named in this record. Grünholz, Gangerschild, and Schauby can all be found in Meyers Gazetteer.

Perhaps the phrase "des Südenseer Hüfner in Grünholz Asmus Hinrichsen" is indicating that Asmus Hinrichsen was originally a farmer in Südensee and now lives in Grünholz.

The Schauby location has me puzzled. The ones identified by Meyers Gazetteer are across today's Danish border into Denmark. While either one could be correct, I assumed that most baptismal sponsors would live reasonably close to the location of the baptism. There is a closer village, near to Schleswig, named "Schuby" and I wonder whether this is the one referenced in the parish record.
I've seen the "Südensee" location or adjective in connection with this village of Grünholz in other records. Perhaps it is used as an "identifier" to distinguish that particular Grünholz from the similar named village to the east in Kreis Eckenförde???

Yes, I saw that also. However, because the parish records I've been searching seem to pertain to the village Grünholz in the Esgrus parish in Kr. Schleswig, I've discounted both those duplicate named villages in Kr. Eckenförde.

Have you considered that Schauby (where the third baptismal sponsor is from) is the place called: Esgrusschauby?
Esgrusschauby is in the parish of Esgrus; it is slightly east of Grünholz and slightly southeast of Esgrus.
