Why is data from birth registers between 1914-1925 not available in the Hungarian Registers catalogu

If you have specific records you can provide it might help to get a clearer answer to the problem.
Recent changes in the laws of this country have required permission changes in how the FamilySearch catalog and other information are obtained and viewed by the public. The first suggestion I can offer at this time is to keep trying to access the records over time, as the permissions may change in the future. Remember that the 1920s to current are not normally allowed because of privacy restrictions.
I can also suggest that at this time you take advantage of other platforms for research, such as Ancestry or FindMyPast, to name a few, which work under different restrictions than FamilySearch.
You may also want to contact the original Archives that hold the records if it is still possible to go directly to the source. (You will find the archive listed in the catalog record.)

Even when there are not restrictions of more than 100 years, access to records from 100 years ago is not instant. It may take months to more than a year for records from 1925 to be made available - not just on FamilySearch, but on any genealogy website.
You may find it useful to visit the https://community.familysearch.org/en/group/13-austro-hungarian-empire-research group.
Hope this helps.0
