Why is it not possible to register a homo-sexual relation
I want to add my niece's partner. They are married and both women. The system refuses to accept this and reports that this concerns homosexuality. This is strange, because you can't complete your family tree this way. Is there a reason for this? In the Netherlands, men can marry men, as can women marry women.

You will need to be more specific in what and how you are doing this. Family Search does allow for **** marriage.

The FamilySearch Family Tree is designed to encourage genealogical accuracy based on original source records. The Family Tree provides the ability for users to document all family relationships, including **** marriages and **** adoptions. Here is an article on adding other relationships to FamilySearch

I also have a **** marriage for 2 living women in my branch. It's not a problem to do this. The only thing is, that on creation of the marriage, a distinct warning in red appears, that you are creating a **** relationship, nothing more. The **** relationsship itself is created without any problems.

The Community editor software (I presume) is zapping whatever it dislikes and replacing it with 4 asterisks. This even applies to the link to the Help Article and the other article that @Áine Ní Donnghaile linked to. It is rather absurd that the Community Editor(?) is sabotaging this discussion (because the links cannot be defined) and presumably therefore the Editor is rejecting what FamilySearch itself has written!
