How do I restore a merge that is in error. Family Search says I can not.

You can restore the profile that was merged away. Once additional edits have been made, you cannot "Undo" a merge.

@DWGreen You restore that merge the same way you always restored a merge when editing prevented a simple undo. Go to the deleted person's profile page which you can get to through the change log of the surviving person, and click Restore:
