If a baptism record has the 1st name of the person but no last name and just says "son" or "daughter" of John Redman, is it correct to understand that I DO NOT put a last name for the person being baptized?

I have been taught in the past that you don't assume the last name unless it is actually written.

That is correct; you do not enter a surname. You put blank for the surname. If it puts son or daughter or sometimes you may see an s or a d, then you can put male or female for the sex, but you don't put anything for the surname unless it actually states it.
