Would someone please fill in the blanks?

Jürgappears to be struck-through. Also note that we again have the word "Mann" in the left-hand margin.Translation:

I agree with your interpretation of Lebeck - it should be Lehbek [just a mile away from Gelting]

Two questions or food for thought:
Could it be that he managed the cow herd for the Gut Gelting estate? Such large estates, along with their serfs, were still prominent during that time period in that part of Germany.
As I understand it, the southern edge of "Jutland" was essentially today's current border between Denmark and Germany. Any thoughts on that?

It's possible that he did manage the cow herd on the Gut Gelting estate. In Meyers Gazetteer Gelting is identified as an estate district. Lehbek, where Niels Nielsen lived, is only about a mile south-southwest of Gelting. Of course this is conjecture until you find evidence of such.
Identifying someone as being a native of Jutland might be implying that he was a Dane, who came south from the upper peninsula and settled in the Gelting area.
