Can someone make out the surname circled in red in these records, please? It looks like 'Birckenstoch' to me, but I just want to be sure.

      Hello,

It looks like Birckenstock. I don't know where in Germany this record comes from, but if you go on the Germany name distribution website Geogen (stoepel.net), you can see that there are 2 areas that have Birckenstocks--one in central Bavaria and one around the Bremen area.
