I have seen cases where an enlistee even used a nickname rather than his given name upon entering military service back then. There is no indication it was preceded by a legal name change. So, yes, I can see that happening, and the best documentation would probably be his draft card. Not that it makes it totally legal, but if he used the new name ever after, who's gonna challenge it?
Such a thing would never happen today in peacetime, but the buildup during WW2 was very rushed of necessity!
