I have located my 2nd great-grandmother on the 1845 census in Holstein, and that census states that she was born in Gut Eckhof, Eckenförde. This is, to the best of my knowledge in Schleswig. I am looking for confirmation that I have the correct family.

Parts of Schleswig Holstein were in Denmark at one point. The records for Eckenförde are in the German archives, not the Danish archives. You might share this question in the German Countries community group. However, I can also make some suggestions.

The website https://www.meyersgaz.org/ can be used to tell which local parishes were nearby to Gut Eckhof
Depending on whether your ancestor was Catholic or Lutheran, you would want to review the church books in the parishes surrounding Gut Eckhof.
If your ancestor was Lutheran, you can use the subscription website https://www.archion.de/en/ to see if the church books are digitized.
If your ancestor was Catholic, https://data.matricula-online.eu/en/ is free to use. You may or may not find the catholic parishes digitized here.
