Understanding Notes on household records
I have Eric Unden married to Catharina Gustafsdotter. They are in Täby, Örebro and then they move to Kumla, Örebro. Eric's name changes to Furier Unden. Then there are some notes about Stockholm. Please help me sort through this.

In your first link Eric Unden seems to be a Trumslagare =drummer
Next link I believe Furier in an occupation not a first name. furir =corporal (18th century)
Third link he is afsk Four which means retired corporal, and the note on the far right says: should be in Stockholm (skall vara i Stockholm)
Undén is a soldier name

In 1796 book Catharina is shown as a widow. Did he die in Stockholm? I would be grateful for any information you can help me with!!

Catharina is not a widow, she is a wife, big H in front of her name and on the right the note says: mannen är (? karl) i Stockholm which means that man is (some worker) in Stockholm

Yes, that is correct, she is a widow.
I believe that Eric indeed died in Stockholm. In that previous book, notation about him being in Stockholm is crossed over, so it is most likely that Eric died during that time period 1796-1800.

I would look first from normal parishes. I have made the following chart to help to understand the parish web in Stockholm and when different parishes were established. I would also look Eric from death records first, because you have a time period for his death.

I have another question about this family. I am trying to follow Anna Christina.
In this record I believe she is moving to Sköllersta. What does the "UVHS" mean by Anna and Eric?

In this record she is shown as moving to Stockholm. There is a note about a out of wedlock child but I am not sure about all the details.

Yes, in the first record Anna Stina moves to Sköllersta at 1788.
UVHS is just a marking about reading and knowledge of Lutheran doctrine.
Third link is next one. Anna come from Medåker at 1792. Note under her says that she got an illegitimate girl child at 27 Nov who died right after birth. Then she moved to page 251
Your second link is that page 251
Anna moved to Stockholm at 20 Sept 1794. Note says she got an illegitimate stillborn child 1793. (previous page however tells that the child was a girl and she was born alive, at least took one breath and then died)

Where is Örebro Stad? I also saw that her brother, Eric moved to Örebro. Should I be looking outside of the parish Örebro?

Örebro parish is today called Örebro Nikolai församling, so this is the parish you should be looking for.
